Sweet Potato Quinoa bowls

I have been trying really hard to keep up with my weekly menus lately. We do the Meatless Monday, Taco Tuesday, Wing night Wednesday, Tupperware Thursday, and Fatty Friday. Thursdays are leftovers from the fridge because I do grocery shopping on Thursday and Fatty Friday originated when I was still working at the bank, On Fridays we had to stay until 6pm and most of the time I was too burnt out to cook so I would pick up a pizza on the way home. Now, I try to stick with some type of italian dish- Pizza, pasta, lots of sauce and grease. Our little treat for being good all week.

This week I was struggling for Meatless Monday, Wonderful Husband was away all weekend and I was feeling off my game. I surfed pinterest and found a recipe for sweet potato quinoa black bean bowls. I had pretty much nothing for the recipe except the main ingredients so I decided to play with it and make my own version

I chopped two sweet potatoes up into cubes, drizzled them with olive oil, sprinkled on some spices and tossed them in the oven to bake at 400 degrees.

I made regular quinoa and then added some garlic, spices, and onions.

I chopped up a tomato, opened a can of black beans and tossed everything together in a bowl.

It was pretty good. Wonderful Husband refused to even touch it. He’s not a big quinoa fan. But I really liked it, and even ate the leftovers for lunch today.

I would imagine it would be very easy to swap the quinoa for any type of rice, or maybe even a pasta.

Quick, simple, and wholesome dinner. It also makes me really excited that I planted sweet potatoes in my new garden!

  1. I love simple and easy recipes like this. On those nights that I am tired but still want to eat healthy, I cook up any veggies that I have in my fridge and mix it with some cooked quinoa. Depending on my mood, I will top it off with toasted pine nuts or shredded parmesan or cheddar cheese.
