Zucchini Casserole

Now that my zucchini plants are producing, I seem to have a plethora of them laying around. I have realistically only picked three, but do you have any idea how far three zucchini will take you? Allow me to tell you- 4 loaves of zucchini bread, fried zucchini, quinoa/zucchini lunch, zucchini casserole, and I still have one zucchini laying in the fridge!

I happen to love zucchini, winter is a sad time for me because you can’t find a decent zucchini anywhere, I could probably eat it every day in the winter. I am loving picking them in my garden and being able to use them in the house. I am thinking if I get enough vegetables I can probably grate them up and freeze them to make zucchini dishes through the winter this year (please, please, PLEASE).

Today I made a garden vegetable quinoa that I had. It was one of those little packets where you just add water and let it simmer, it already had all the spices and things mixed it. At the last minute I thought to slice up a few pieces of zucchini and toss them in. It was really good. I had been pretty good with my eating all day, so when the hunger bug hit me at 7:30pm I didn’t want to ruin it, but I knew I had to eat something.

I didn’t want to just eat the left over quinoa, where’s the fun in that? I decided I would slice up the rest of the zucchini and toss it with the quinoa. But that left the problem of raw zucchini with cooked quinoa. Then an idea started forming…

I rummaged through my fridge and came up with mozzarella cheese, diced onion, pasta sauce, and my zucchini. I can make this work.

I sliced the zucchini and tossed it with salt and some Italian seasoning. I sprayed a little casserole dish with Pam and put the zucchini in. Then I put stirred in the onions, the leftover quinoa, and some cheese. I topped it with some pasta sauce and some more cheese and popped it in the oven. I baked it for about 30 minutes at 350. It probably could have gone longer, but I was starving.

It was so good! I had to immediately grab the computer to write the post so I don’t forget how I made it. I am not sure how big a part the flavored quinoa played because there really wasn’t too much left, it could probably be swapped for bread crumbs or nothing or plain quinoa. I will definitely be playing with this in the future. I never knew that zucchini was so versatile! I should have taken a picture but I got really excited and ate it.
