Bubble Up Pizza

I went out, like out to a bar, with a friend, without my husband, for the first time since Little Darling was born.

It was fun, but it was a little scary. I kept checking my watch and texting home, convinced something was going to go wrong. But, Wonderful Husband was wonderful as always. They played and played and he got her into bed on time and with no crying. I got to enjoy my evening out, and everybody was happy.

I wasn’t sure what to make for dinner because I wanted minimal clean up and effort. I settled for bubble up pizza. These recipes have been floating around on Pinterest forever and I am a big fan because they are so versatile and easy.

All you need is:

2 cans of canned biscuits
1 jar of pizza sauce
mozzarella cheese
toppings

You open the biscuits and cut the dough into quarters. Toss the biscuit quarters in a bowl with the pizza sauce, toppings, and cheese. Pour it all into a greased casserole dish, top with more cheese and toppings, and bake it at 350 for about half an hour. The only problem I have is that sometimes I can’t get the middle of mine done because of my dumb oven. However, Wonderful Husband seems to love raw dough and scoops out all the gooey parts for himself- gross.

Its a quick, kid friendly, easy dinner for a busy week night. I hope you enjoy!!
